He chose the site because its soil is the exact same chalk/clay mix as found in Champagne, and the climate is similar too - perfectly suited to Chardonnay and Pinot Noir. Such has been their success that several big Champagne houses have made overtures to buy Ridgeview - and Taittinger have bought land nearby. Cavendish is their classic Champagne-style blend - rich, rounded and exceptionally balanced. The Roberts family recommend serving it with Sussex charcuterie or richer canapés like smoked duck, salmon pâté or grilled vegetables.
